The spirit of this fictitious character inspired a brand new style of rum. But despite being macerated and purified in pineapple, Plantation Stiggins’ Fancy doesn’t taste particularly like pineapple. You could taste its subtle notes, but it’s far from a pineapple-flavored rum.

The secret to the success of Plantation’s pineapple rum is the distillation process. First, Queen Victoria pineapples are stripped and the rind is macerated into the house’s white rum, which is already a 3 star product, and left to impart their flavours for one week. Then, the flesh of the pineapples is added during the distillation of a combination of the light rum and a dark rum in a pot still. The pulp is left to develop its flavours for a whole three months so it can permeate the dark rum. When the two spirits are married together, the result is a rich, fruity rum with the real flavours of pineapple. First place went to Nico de Soto of Mace in New York and Danico in Paris. His recipe calls for a total of three rums: the aforementioned Plantation pineapple rum; New Grove Plantation white rum, which has notes of guava and banana, from the island of Mauritius; and Père Labat 40, an agricole-style rum from the island of Marie-Galante. To this is added three-quarters of an ounce of pineapple juice, a half-ounce of lime juice and a quarter-ounce of rich cane syrup. Arriving with no garnish other than a fluffy crown of froth, thanks to the fresh pineapple juice, McGee described it as “archetypal” while Favre found that “the cane flavor of the rum supports the fruit,” for a particularly balanced and integrated expression of the drink. Before the success of the Plantation Stiggins’ Fancy, pineapple rum was hardly a real concept. However, that would all change in the coming years, as several new producers started rolling out their own pineapple-inspired rums. So, what’s Pineapple Rum?Though this rum is usually aged in a rum cask, some producers opt for a second aging process in a Cognac cask. In this way, Plantation puts their signature spin on this Jamaican rum, although in this case there’s no dosage, which is what makes this one “special dry.” Fans of Jamaican “funk” should know that this one is modestly estery, at 156 g/hL AA.It’s perhaps unsurprising, then, that the casual rum drinker and the serious rum geek often have wildly differing reactions and estimation of a company like Plantation Rum. This is a complex topic; one that takes into account ownership, secondary finishing practices, legal lobbying and transparency in labeling. Suffice to say, the Plantation brand has long been something of a lightning rod for discussion among rum devotees. We’ve seen the mango rum trend. And we’ve seen the orange rum trend. But now, it’s time for pineapple. Rum from Fiji has been all the rage among the rum geeks in the last few years, so it’s no surprise that Maison Ferrand wanted a piece of that action, if the category were to continue catching on. This is a pretty standard Fijian rum, a blend of pot and column still rums aged tropically for 2-3 years in bourbon casks before the usual 1 year of finishing in Ferrand casks in France. It’s lightly estery, with a moderate level of dosage.

Both the flesh of the fruit and its skin can be used to make rum. First, the fruit and the skin are submerged in rum. Depending on the recipe, they could be put in an additional type of rum after the first one. Wow, this tastes like a completely different rum. The lime really pulls out the pineapple without making it overly sweet. The biggest change is the baking spices. It’s reminiscent of a mulled cider. It is presented in a squat Scotch-style bottle with a bright and colourful label depicting tropical flowers, birds, and lizards and boldly marked “Isle of Fiji.” On The Nose What I love about this drink, and daiquiris in particular is that you can do so much to very easily mix them up. Po zmiešaní si ešte tradične „oddýchne“ vo Francúzsku v sudoch po koňaku – tentoraz 3 až 6 mesiacov. Pred fľašovaním sa doň ešte pridáva cukor (15 g/l).
